Why Lobster is So Delicious?


What is lobster?
Lobster is a kind of marine creature that has a long body with muscular tails, and they live on burrows in the sea floor. They have five pairs of legs and three of them have claws, it includes the first pair which usually much larger than other pairs.

Most of the Lobsters live for about 45-50 years in the wild, although determining the age of it is really hard somehow some animal expert was able to conduct their own research and observation that is very useful for other people and get to know more about Lobsters.

It is all known that Lobster is highly price in the seafood market because of the quality of the meat inside its body, with the right way to cook it and with different kind of techniques apply to make Lobster the most delicious seafood in the world.



What are different types of lobsters?

1. Reef Lobsters
Have claws but usually do not join the group of clawed lobsters. Most Reef Lobsters claws can be seen on the first side of appendages and not on the usual side of pairs.

2. Clawed Lobsters
Are most common Lobsters that people see in the market, it has five pair of walking legs with three sets of claws, always the first pair of claws are much larger than others.


3. Slipper Lobsters
Slipper Lobsters has a large antennae and it doesn’t have much claws. The build and shape of it is much flatter than other kind of Lobsters and their faces looks like it has been smashed by big rock. Usually Slipper Lobsters do not bury themselves in the mud during daylight unlike other Lobsters but instead they hide in some holes, with this kind of behaviour they tend not to be the main food in the market.

4. Spiny Lobster
Spiny Lobster or some call it Rock Lobster, it is a different type of Lobster that is highly unlike other type of Lobster because it doesn’t have claws in front of its body, some cannot hardly recognize this lobster to the reason that they are over-sized, with a thick antennae that make them a Spiny Appearance.

5. Squat Lobster
It is not really much of a lobster, they just resemble the Clawed Lobsters but in fact they are much related to crabs or the hermit crabs. Squat lobster also live on burrows in the sea floor, although they have been known to use their claws to hunt for food and dig sand.

6. Furry Lobster
Has a protrusions on their body that may appear to be covered in hairs, it also has a large antennae but not like Spiny Lobster, they are just small kind of lobster that makes them to easily avoid most of lobster traps. 


How to easily cook lobster?

Steamed Lobsters
Steaming Lobsters is different from boiling. It cooks slowly so it will reduce the chances of overcooking and preserves the ocean fresh taste of it.

Steaming procedure:

1. Must use a large pot that is enough to hold the lobsters and fill the pot with water, make sure that the sides are about two inches. For much easiest method is to use a steaming rack if in case you do not have that you might try this method How to Steam Without Using Steaming Equipment

2. Put at least 2 tablespoons of salt for each quart of water. I much prefer Sea Rock Salt to taste more.

3. Must control the water and bring the water to rolling boil, and now put the Lobsters, we all know some lobsters are big so you can put one at a time. Once the lobster is in the pot already cover tightly and return to boil quickly and start a timer.

4. Must steam the lobster for about 7-8 minutes per pound, this is a proven result for steaming a lobster so it is best to follow the procedure for best results, now for the first pound, add 3 minutes then another 3 minutes per additional pound. Try to control the heat as much as possible to avoid turning into hard boiled.

5. Once done, use a thong and carefully remove the lobster from the pot. Be extra cautious because it is really hot, set a large bowl or platter and let it cool for about 3-4 minutes.


Boiling Lobster
If you want to cook many lobsters at the same time, this method will be much faster than any other, but be very careful to not over-cook them as it takes away the fresh ocean taste of it.

Boiling procedure:

1. Get a large pot, enough to hold the lobsters and when you fill water make sure it must cover every part of the lobsters or the lobsters must be deep enough.

2. Put 2 tablespoons of salt for each quart, as I’ve mentioned in Steaming Procedure, Sea Rock Salt is best if you have it. Bring water to boil over high heat.

3. Make sure your lobster is completely deep enough that water is covering every part of it.

4. Must Cover the pot tightly and return to boil as quickly as possible. When the water starts to boil, that is the time to start a timer, and at least try to control the heat as much as possible not to overcook the lobster.

5. Remove the lobsters from the pot using thong and be very careful, set a large bowl and let it cool for about 3-4 minutes before you crack it.



Tips:

How to determine if my Lobsters are already cooked and ready?

Most of the people cooking lobsters make mistake when trying to cook it with different amount or size. Like for example if you manage to cook a quarter pound size Lobster well and when you try to cook again half pound size Lobster with the same method the result is different.

The basic understanding is, it is not really about procedure, it is okay to follow the same procedure but you must know that Lobster is cooked when the shell is entirely red. If properly cook the lobster’s meat becomes a creamy like white colour all the way through. Must take note that when you take your lobster out of the pot it will still continue to cook.
